Radish: The Science

Radish

Radish is broccoli's cruciferous cousin. Its sprouts carry sulforaphene and other isothiocyanates, and its microgreens are unusually rich in vitamin E.

What the research shows

Among broccoli, kale, and radish sprout varieties compared, radish had the highest glucosinolate and isothiocyanate content.

Daikon radish sprouts contain about 30 times more isothiocyanate (sulforaphene) than broccoli sprouts contain sulforaphane, with a comparable liver-protective effect.

Keep in mind: The liver result comes from an animal model.

Radish sprout isothiocyanates were absorbed and used by the body, lowered glucose, and raised genes tied to building new mitochondria.

Keep in mind: This was a fruit-fly model.

Across 25 microgreens, young leaves held 4 to 40 times more vitamins and carotenoids than database values for the mature plants. Green daikon radish had the highest vitamin E (tocopherols).

Keep in mind: The 40× figure is one specific case (red cabbage vitamin E), not an average, and mature values came from a national database rather than side-by-side testing.
