Mix Beans: The Science

Mix Beans

Our bean mix is a blend of sprouted legumes. Sprouting changes the seed itself, breaking down compounds that normally block mineral absorption.

What the research shows

Sprouting breaks down phytate and raises iron availability in legumes, for example chickpea +39% and mung bean +61%.

Keep in mind: This applies to iron only. In the same data, zinc availability fell in several legumes.

Germination cut phytate phosphorus by up to 81% in faba beans and 63% in azuki beans.

Keep in mind: Faba and azuki are not in our mix; results for our beans are estimated.

Pulse microgreens such as mung bean, chickpea, and lentil vary in chlorophyll, antioxidants, and minerals depending on growing conditions.
